So I've got an Amiga 1200 and am wondering what to do about the video output. It is a British machine and I am in America. I have a SCART-RCA cable from the UK and a cable that looks like this (http://ecx.images-amazon.com/images/I/415cj5eYcaL._SL500_AA280_.jpg).

Can I use the RCA cable on an American TV? If not, what are my alternatives?

What kind of monitors/TVs do you have around and what kind of connections do they have?

Generally, unless it's been modified, the only output the A1200 has is RGB and composite. But, since you have a PAL machine, the frequency is wrong for NTSC TVs, giving you monochrome instead of color and maybe a rolling picture. That would be done with the cable you linked a picture of. The problem is, the DAC is made to output to the PAL color standard, and will not work on NTSC TVs without extra hardware.

The RGB port won't be useable on a TV. If you have or can get an old RGB monitor, that is the easiest and looks very good, no matter what region you are in. You can get the RGB to work on VGA through more hardware with one of these.

So after a lot of searching around I've come up with a somewhat convoluted solution. I take composite out of the Amiga into a Composite-VGA adaptor. Then I use a small female VGA to Female VGA adaptor which then goes into a Sony monitor.

Should this work?

Yeah, but it'll look terrible. Your best bet is to use the composite connection, and if you're not happy with it, invest in a RGB > Component converter.
